Although I’ve been a vegetarian for more than half my life (17 of 34 years), I still struggle with nutrition. Cheese and carb addition plus not liking fake meat products = massive protein struggle. So I created this recipe to bump up my breakfasts. Also, selfishly, I made it five-serving recipe to take care of breakfast for the entire work week. Boom – breakfast solved. I’m a messy cook, and it’s not the prettiest dish ever but it is yummmmmmm and will hold you over until lunch. Enjoy!
5 small to medium apples, diced
2 scoops vanilla whey protein powder
1/2 cup peanut butter (I use Jif natural, creamy or chunky is your choice)
1/2 cup nonfat Greek yogurt
1 cup plain soymilk (feel free to use skim milk if desired)
Cinnamon to taste ( I LOVE cinnamon, so I used 2-3 tablespoons)
1/2 cup traditional oats
1. Preheat oven to 350 degrees.
2. Chop apples and place in large casserole dish.
3. Sprinkle with protein powder.
4. Add peanut butter, milk and yogurt. Stir until mixed.
5. Bake for 20 minutes.
6. Add cinnamon and oats. Stir to mix.
7. Bake another 10 minutes.
