Finding vegetarian pasta recipes that are delicious and also happen to be healthy can be challenging. Weight Watchers is my current fat attack method of choice (and hopefully the LAST one), so I created this Weight Watchers recipe, and I’ve gotta say I’m pretty proud of myself. AT just SEVEN POINTS, yep I said seven, it’s creamy, tasty and filling. (I swear I mean filling for a normal person, not anorexic Barbie.) Ready?
You will need (this recipe is for one, so multiply if needed):
3/4 cup uncooked pasta (equates to one cup cooked – I used Barilla White Fiber, but it’s 5 points no matter which kind you use)
2 Wedges Laughing Cow Cheese (The Light Garlic and Herb is my fave but pick your poison)
1 cup artichokes (fresh, frozen, canned, or bottled – doesn’t matter as long as you’re using water packed, not oil packed), chopped
1/8 – 1/4 Cup Lemon Juice (If you are super sensitive to tart foods, stay on the light side with the lemon juice)
Salt and Pepper to Taste (I recommend more pepper to balance it out if you went with the full 1/4 cup of lemon juice)
2 TB grated Parmesan Cheese
Cook pasta according to package directions. While pasta is cooking, mash together remaining ingredients with a fork. Drain pasta, mix with artichoke/cheese mixture. Enjoy!
